Buddha bowl

I have a huge love for simple foods! This weekend I made myself a Buddha bowl, which is simply rice and veggies of your choice. The secret is in the sauce, super simple, and gives you that restaurant taste! Asian food never disappoints, and is my all time favourite!

This Buddha bowl is super yummy, satisfying, filling, and healthy, and it is super easy to put together, anyone can do it. I promise!

For the bowl you will need;

  • Jasmine rice
  • A dash of sushi/rice vinegar to taste
  • Spinach
  • Arugula
  • 1/2 Carrot
  • 1/3 Cucumber
  • 1/2 Red bell pepper
  • 1/2 Mango
  • 1 Avocado
  • Edamame (I buy mine frozen)
  • Sprouts of your choice
  • Sesame seeds
  • A couple of leaves cilantro on top

Sauce;

  • 1 Tbs sesame oil
  • 2 Tbs soy sauce (Tamari or Liquid aminos for gluten free option)
  • A bit of wasabi to taste

Simply cook the rice with lightly salted water (I recommend to use pink himalayan salt), and add in the vinegar when it is done. Taste to see how much vinegar you want in your rice. Cut all your veggies and fruit of choice into small strips. Combine the sauce and we are ready to assemble our buddha bowl.

20.01.18 buddhabowl 5.1Personally I like to add some spinach and arugula in the bottom of my bowl, to make it a bit lighter and fresh. Then add in a scoop of your rice and top it with the vegetables and mango. Sprinkle on some sesame seeds, and pour a little bit of the sauce over the rice and veggies, and you are done!

I really hope you like this recipe as much as I do! It has really become one of my favourite meals, as it fills me up, but it is still fresh and a easy way to get in a lot of greens into your body! A well balanced meal!
